Clad cookware

Cookware made from bonded layers of different metals to combine properties such as stainless-steel durability and aluminum/copper heat conduction.

Cross-contamination

Transfer of microorganisms or contaminants from one food, surface or utensil to another.

Induction

Cooking technology that uses electromagnetic fields to heat compatible cookware.

Instant-read thermometer

Food thermometer intended for quick temperature checks rather than remaining in food throughout cooking.

Nonstick coating

Applied cooking surface designed to reduce adhesion; generally treated as a wear surface.

Seasoning

Polymerized oil layer maintained on bare cast-iron or carbon-steel cooking surfaces.

Tare

Scale function that resets displayed weight to zero with a container already on the platform.

Thermal mass

A material's capacity to store heat; heavier cookware often changes temperature more slowly.

Workflow

The sequence and physical arrangement of prep, cooking, storage and cleanup tasks.
