Mixing bowls
Stainless bowls are light and durable; glass bowls are heavier and transparent; some plastic bowls are light and less breakable. A stable base and a few distinct sizes matter more than a large matching set.
Digital scale
Weight measurement is especially useful for baking, portioning bulk ingredients and repeating recipes. A tare function lets you zero the container between ingredients.
Volume measures
Volume cups and spoons remain useful because many recipes are written in those units. Liquid measuring jugs are shaped to make fluid-volume readings easier at eye level.
Use appropriate precision
Not every ingredient needs laboratory precision. Match the measuring method to how sensitive the recipe is to the quantity.
