Nonstick cookware: where it helps and how to extend its life

Nonstick cookware is useful when easy release matters. The tradeoff is that the cooking surface is a coating with a finite service life.

Where it helps

Foods that are delicate or prone to sticking can be easier to manage on a nonstick surface. It is not necessary for every cooking job.

Heat limits

Different coatings and pan constructions have different temperature limits. Follow the manufacturer's published guidance, particularly for preheating, oven use and broiler exposure.

Surface protection

Use utensils the manufacturer lists as compatible and avoid cleaning methods that scratch or abrade the coating.

When to retire it

A deeply damaged, peeling or otherwise deteriorated coating is a reason to consult the manufacturer and consider replacing the pan rather than trying to restore the surface with aggressive methods.

For food safety, use current public-health guidance and a food thermometer when temperature matters. For powered appliances, hot surfaces and specialized equipment, follow the current manufacturer instructions.
