Stainless-steel cookware: strengths, limitations and care

Stainless cookware is popular because it is durable and versatile. Much of its performance comes from the conductive layers bonded to the stainless cooking surface.

Clad construction

Multi-layer cookware may use aluminum or copper inside stainless steel. Full cladding extends the conductive layer up the sides; disc-bottom construction concentrates it at the base.

Heat response

A thick, well-bonded conductive core can reduce hot spots and improve responsiveness. Very heavy construction may retain more heat but can feel slower to adjust.

Cleaning

Allow a hot pan to cool enough to avoid thermal shock before washing. Soaking and nonabrasive cleaners usually handle routine residue; manufacturer guidance should determine whether stronger cleaners are appropriate.

Discoloration

Heat tint or mineral marks can look dramatic without necessarily affecting function. Distinguish cosmetic changes from pitting, warping, loose handles or other physical damage.

For food safety, use current public-health guidance and a food thermometer when temperature matters. For powered appliances, hot surfaces and specialized equipment, follow the current manufacturer instructions.
